A delicious spiced bean brunch recipe, perfect for a weekend treat when you have time to make a little bit more effort but still want to keep it simple!
Ingredients:
1 tin of beans (butter beans or canellini beans work best!)
2 - 3 medium sized on the vine tomatoes - cut into small pieces
1 white onion finely sliced
3 cloves of garlic crushed
1tsp cumin seeds
1tsp paprika
1tsp five spice
1 tsp coriander
Wedge of lemon (optional)
Recipe:
1. In a saucepan, cook the onion and garlic in a glug of oil until softened
2. Add the cumin seeds for one minute, then add the remaining spices
3. Stir and cook for a couple of minutes
4. Add the chopped tomatoes and drained beans and season with salt and pepper
5. Cook for approximately 5 minutes and then crush the beans using a masher. I usually crush about half the mix to allow for some texture
6. Cook for a further 5 minutes until the tomatoes have reduced and created a delicious sauce
7. Stir in salt and pepper and finish with a squeeze of lemon juice
8. Serve on thick toast with fresh herbs, like parsley or chives
